Sweet roasted whole cauliflower

With turmeric and citrus aroma

Ingredients.

Cauliflower

~1.5 tbsp miso

½ tbsp maple syrup or 1 tbsp mirin

½ small orange

1/2 lemon

1/6 tsp turmeric

Black pepper

¼ tsp wholegrain or dijon mustard

½ tbsp olive oil

1 cauliflower

Sauce

Mix of fresh chopped parsley/ coriander/ basil/ chives/ mint

½ baked lemon

Pistachio paste or ground roasted pistachio

Tahini

Salt

Water to thin

Optional - apple cider vinegar if you like it more sour


Preparations.

  1. Microwave covered in a large bowl with some water for ~5min/ steam/ boil the whole cauliflower until cooked

  2. Optional - Make a well in the cauliflower and place in ½ lemon (add more citrusy aroma!)

  3. Mix miso, maple syrup, juice of ½ small orange and ½ lemon, turmeric, black pepper. mustard and olive oil

  4. Brush the cauliflower with the sauce, then bake at 180C along with ½ lemon until golden brown

  5. For the sauce, blend the fresh herbs with juice of baked lemon, as many pistachio as you want, tahini, apple cider vinegar, salt and water (alternatively finely chop the herbs so no need for blending)


Notes / Chats.

  • Substitute tahini with any sesame sauce you have, but no need to add water if it’s quite runny

  • You can ground the roasted pistachio using a rolling pin if you don’t have a blender

  • Adjust amount of miso according to its saltiness
