Korean miso tofu stir-fry & lemon mustard tahini

Spicy and savoury stir-fry

Mix of texture from vegetables and tofu

Ingredients.

1 tbsp miso

3-4 tbsp water

½ tbsp rice vinegar

½ tbsp gouchugaru or ½ tbsp gouchujang

½ tbsp mirin or ½ tsp sugar

½ tsp sesame oil

Blackpepper

Tofu

Nori

Cornstarch

2 Garlic sliced/ minced

Cabbage, mushroom, onion

Scallion

Wholegrain mustard

Tahini or any sesame sauce

Lemon juice

Water to thin


Preparations.

  1. Mix miso, water, vinegar, gouchugaru, mirin, sesame oil and black pepper in a bowl

  2. Wrap the tofu with nori, coat with some cornstarch then pan-fry until golden brown, then transfer aside

  3. Saute the vegetables until slightly softened, then add the sauce and tofu

  4. Cover with a lid and cook until the vegetables are done

  5. Meanwhile mix wholegrain mustard, tahini, lemon juice and water

  6. Top the stirfry with the sauce and chopped scallion


Notes / Chats.

  • No need to add water if using runny sesame sauce

  • Feel free to add more vegetables you like
